Corona Extra Beef Taco Queso Dip

It’s not a party until someone brings out the dip, and when that dip is a layered beefy, cheesy queso, made with Corona™ Extra, you know it’s more than a party — it’s a fiesta. All you need to do is heat some tortillas to serve with the dip and fill a big bucket with ice and more Corona™ Extra, and you’re good to go.

Ingredients

  • 1 lb lean (at least 80%) ground beef
  • 1 medium onion, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 package (1 oz) Old El Paso™ original taco seasoning mix
  • 1/4 teaspoon cayenne
  • 8 oz cream cheese, cubed
  • 3/4 cup Corona Extra™
  • 2 cups Old El Paso™ shredded Mexican 4 cheese (8 oz)
  • 1 can (4.5 oz) Old El Paso™ chopped green chiles, drained

Garnish Options

  • Chopped fresh tomatoes
  • Chopped green onions
  • Serve with Old El Paso™ flour tortillas (tip for tortilla chips)

Directions

  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.
  • In 2-quart saucepan, heat cream cheese and beer over medium-low heat 3 to 5 minutes, stirring constantly with whisk, until cream cheese is completely melted.
  • Stir in Mexican 4 cheese blend a little at a time until melted and sauce is smooth, about 4 minutes. Stir in green chiles. Pour over beef mixture in skillet. Serve with tortillas.
