Ingredients

Crema

  • 1/3 cup Mayonnaise
  • 1/3 cup sour cream
  • 1 Tbsp. Water
  • 1 tsp. Lime Juice
  • Small Pinch of Salt
  • 1/2 tsp. Chili Powder
  • 1/2 tsp. Smoked Paprika

ELOTE

  • 1 Ear of Fresh Corn
  • 3 tsp. Crema
  • 4 Tbsp. Cotija Cheese
  • 3 tsp. Tajin Seasoning
  • 2 Tbsp. Cilantro
  • 1 Lime Wedge
  • 1 THICK (~ 5MM) Bamboo Stick

Directions

  • Prepare grill to high temperature.
  • Pull husk away from corn cob and remove silks. To create a handle, insert bamboo stick.
  • Grill corn, turning every 2 to 3 minutes, until slightly charred on all sides up to 10 minutes
  • In a small bowl, whisk together mayonnaise, sour cream, water, paprika, chili powder, salt and lime juice.
  • Brush crema over grilled corn covering every kernel
  • Sprinkle Cotija cheese around the grilled corn as it will stick to the elote dressing
  • Sprinkle with cilantro and tajin
  • Accompany with lime wedge and serve
