Snapper Ceviche

So simple, yet so impressive. This bright, beautiful appetizer pairs beautifully with a Corona Premier.

Ingredients

  • 1 lb. snapper filet
  • 2 Tbsp. red onion
  • 2 Tbsp. daikon radish
  • 2 Tbsp. celery
  • 1 Tbsp. fresno pepper
  • 2 Tbsp. red bell pepper
  • 1 cup lime juice
  • 1/2 tsp. garlic
  • 1/2 tsp. ginger
  • 3 Tbsp. cilantro
  • 1/2 oz of fish (same as used for the ceviche)
  • 1/2 cup of concentrated passion fruit juice
  • 1 tsp. aji amarillo puree
  • 1 Tbsp. kosher salt

Directions

  • In a bowl mix the snapper filet cut into 3/4 “cubes, the red onion, the daikon radish, the celery, the fresno pepper, the red bell pepper, everything cut (brunoises).
    o 2 Tbsp. corn, shucked
  • Place the following in a blender
    o 1 cup lime juice (fresh)
    o 1/2 tsp. garlic (minced)
    o 1/2 tsp. ginger (minced)
    o 3 Tbsp. cilantro
    o 1/2 oz (by weight) fish (same as used for the ceviche)
    o 1/2 cup of Passion fruit
    o 1 tsp. aji amarillo puree
    o 1 Tbsp. kosher salt
  • Puree until smooth (approx. 15-20 seconds)
  • Pour the contents of the blender over the contents of the bowl, gently fold to combine and chill for at least one hour before serving.
